🍷 Tasting Notes:

The first sip is like hearing a voice you’ve forgotten but always loved, always a welcome companion where a familiar red fruit sings, but it's restrained, elegant. Wild cherry, soft plum, blackberries. The earth rises with it the essence of forest floor, black tea, a hint of crushed herbs. The acidity is alive, but not sharp, it reminds me to breathe between sips and a heartbeat that slows you down. There's olive brine, spice, and a finish like smoke trailing off a story not yet finished.

Note to Self: Timeo feels like ancestral memory bottled in biodynamic rhythm. A wine that tastes like land, labor, and legacy.

 

🪶 Reflection (Quill Section):

In Italian, “Timeo” means I fear. But this wine isn’t afraid. It’s confident in stillness. It reminds us that you can speak powerfully in a whisper—and that the depth of a wine (and of a person) is often found in its restraint.

🍇 Let this bottle be a reminder: Not everything beautiful is loud. Some things pour in silence and still reshape the room.

Technical Sheet

Farming: Organic/biodynamic

Harvest: Hand‑picked at the end of September

Vinification:

  • Indigenous yeast fermentation

  • 35–40 days maceration in small stainless steel tanks (no temperature control or pumping over)

  • Aging: ~1 year in stainless steel (some sources say 6 months in steel & concrete)

  • Alcohol: 12% ABV

 

🍽️ Food Pairing:

Pasta alla Norma, wild mushroom risotto, or grilled eggplant over farro and herbs.

For SX House events, I’d pair this with our Roasted Tomato & Thyme Crostini or Duck Confit over Polenta—something simple, earthy, and slow.
